On The Go Museli Bars

This recipe for this muesli bar is packed with nutrients, is free of refined sugars and is high in fibre. It contains no hidden nasties and is still delicious.

They are great for a quick snack and to grab and go.
These bars can be kept in the fridge for up to two weeks or in the freezer for up to three months.

2 cups organic rolled oats
3 tablespoons natural peanut butter
2 tablespoons coconut oil
2 tablespoons honey
1/2 cup dried cranberries
1/4 cup dried blueberries
1/4 chia seed
1/4 flaxseeds

I added cashews to mine as well because I love them!

Prepare a rectangular tin with baking paper.

1) In a mixing bowl add all the ingredients together.

2) Using a spoon or your hands mix all the ingredients until it forms a thick mixture that is not too crumbly.

3) Once combined, pour mixture into tin and level out with a spoon till it is even. Press down to ensure it is compacted.

4) Pop into the fridge for an hour. Once set, cut into bite size or bar pieces.

If mixture is too dry add water to help bring it all together.

Add chocolate chips for an extra added sweetness, or other dried fruits like apricots, sultanas or apples.
