One-Bowl Banana and Coconut Muffins

I hate washing dishes so I love recipes you can make in one bowl – and this recipe for muffins just needs hand mixing, so you don’t even have to wash the beaters.



Chocolate chips can be added for a special treat, or simply leave as a fruit muffin for school lunches.

Ingredients

3 ripe bananas
165g (3/4 cup) caster sugar
½ cup vegetable oil (or 125g melted butter if you prefer)
1 ts vanilla
2 eggs
300g (2 cups) self-raising flour
50g (1 cup) shredded or desiccated coconut
75g (3/4 cup) chocolate chips

Instructions

Pre-heat oven to 200C and line two muffins trays with 18 patty cases.



In a medium sized bowl, mash the three bananas until smooth and then add the sugar. Use the fork to combine. Pour in the oil (or butter) and vanilla and mix to combine.

Add eggs (if you used melted butter, make sure the butter isn’t still hot or it will cook the eggs) and using the fork break the eggs up and mix completely.

Switch to a metal spoon and add in sifted flour and coconut. Stir only until ingredients are combined – but do not overbeat or muffins can become tough.

Mix in choc chips if you are using, which you probably are. Dark choc chips work best.



Spoon mixture into 18 cases and bake for approximately 15 minutes or until golden and firm to touch.



Enjoy warm straight out of the oven or dust with icing sugar to serve.
